NV Lebeau-Batiste Champagne Brut Tradition

Emilie Lebeau and her husband Florent met at 1am in a nightclub when they were 17 and have remained together as partners in life and wine ever since. Now, at the grand old age of 31, they oversee a multi-generation, multi-century, organic conversion farm that sits in what seems to be Champagne's most "in crowd", of-the-moment village, Chavot-Courcourt. Here they make instantly gratifying, complexly textured, and undeniably delicious Champagne. The Brut Tradition is 60% Pinot Meunier, 30% Pinot Noir, and 10% Chardonnay (20% reserve wine) that spends two and a half years on the lees and has a 7 g/l dosage.
